Whoopie Pies

  1. To make the cakes: Prepare mix as directed on package except using only 3/4 cup of water.
  2. Drop batter onto greased cookie sheet (or use parchment paper to line pan) in 2 1/2 to 3 inch circles.
  3. Bake until toothpick inserted in center comes out clean.
  4. Let cool.
  5. For filling:
  6. In a saucepan,combine flour and milk and cook over medium heat,stirring constantly until it forms a thick paste.
  7. Let it cool.
  8. In a medium bowl, beat the sugar and shortning until fluffy.
  9. Add vanilla.
  10. Add cooled flour mixture beat until double in volume.
  11. Turn the little cakes on their backs.
  12. Spoon a dollop of filling onto half of the little cakes.Place the other half of the cakes on top of the filling to form sandwiches.
  13. I have been told if they set in refrigerator a day or two they are better, Good luck with that!
