Zucchini Fritters Recipe

  1. Lightly salt the zucchini with about 1 teaspoon of salt.
  2. Remove any extra moisture from the zucchini by either squeezing the liquid out with a potato ricer, or by squeezing it with paper towels.
  3. Whisk the egg in a bowl.
  4. Then add the zucchini, flour, scallions, and 1/4 teaspoon of pepper to the whisked egg.
  5. Mix the ingredients well.
  6. Heat the oil in a large frying pan over medium heat.
  7. Cook the fritters in two batches.
  8. Drop six piles of batter, about two tablespoons each, into the frying pan.
  9. Flatten a little bit.
  10. Cook, turning once, until browned, about 4-6 minutes on each side.
  11. Transfer to a paper towel-lined plate.
  12. Lightly sprinkle with salt.
  13. Repeat the process with the remaining batter.
  14. Wait for them to cool, and serve with sour cream or plain yogurt.
