Baked Pasta With Roasted Veggies
- 2 summer squash
- 2 zucchini
- 1 yellow onion
- 8 ounces mushrooms, sliced
- 2 red peppers
- 1 12 cups frozen peas
- 14 cup olive oil
- salt and pepper
- 2 tablespoons italian seasoning
- 1 lb penne
- 1 cup parmesan cheese
- 1 cup asiago cheese
- 8 ounces fresh mozzarella cheese
- 3 cups marinara sauce
- cut up all veggies.
- Toss with salt, pepper, italian seasoning, and olive oil.
- Roast in 450 oven for 15 minute Cook penne until al dente.
- Toss veggies, cheeses, sauce and pasta together.
- Bake in greased casserol pan for 25 minute.
