Peanut Sesame Noodles
- 12 ounces spaghetti or 12 ounces linguine
- 14 cup soy sauce
- 1 cup chicken broth
- 12 cup peanut butter
- 1 tablespoon sesame oil
- 1 tablespoon honey
- 2 teaspoons garlic, minced
- 2 cups Broccolini, slaw or 2 cups packaged coleslaw mix
- 1 cup carrot, grated
- 2 cups cooked chicken, diced (optional)
- Bring a large pot of salted water to a boil and then add pasta to pot.
- Cover with a lid for faster boiling.
- In a microwave-safe bowl or measuring cup, stir together soy sauce, peanut butter, chicken broth, sesame oil, honey and garlic.
- Microwave on high for 2 to 2 1/2 minutes to melt peanut butter.
- Stir and reserve.
- During last 3 minutes of pasta cooking time, add the broccoli and carrot.
- Drain quickly, but do not rinse.
- Return to pot and toss with chicken and peanut sauce.
