Beer-brined BBQ Chicken

  1. Note: This recipe requires several hours of marinating, so plan ahead!
  2. In a large bowl combine the beer, water, salt, sugar and bay leaves.
  3. Stir until the sugar and salt are dissolved.
  4. Add the chicken, cover and refrigerate 8 hours or overnight.
  5. Preheat a BBQ grill on medium-high heat or heat the oven to 425 F.
  6. Drain the chicken and place on an aluminum foil-lined rimmed pan.
  7. Pat the tops dry with paper towel.
  8. Pour the BBQ sauce evenly over the chicken.
  9. Put it into the oven or on the grill and grill or bake uncovered for 35-40 minutes or until the internal temperature reaches 180 F.
