Wild Rice Salad

  1. rinse wild rice with hot water.
  2. Drain.
  3. in pan combine chicken broth with two additional cups of water.
  4. simmer for 30 to 40 min until all water is absorbed.
  5. cool.
  6. Broccoli : chop small.
  7. Carrot: slice thin rounds.
  8. Red bell pepper: cut into strips.
  9. onion: dice.
  10. walnuts: light chop.
  11. mushrooms: large dice.
  12. in mixing bowl mix all ingredients except dressing.
  13. in small bowl mix dressing ingredients until smooth.
  14. pour over salad.
  15. mix and refrigerate.
