Basic Macaroni Salad Recipe
- 1/2 pound elbow macaroni, cooked, liquid removed & chilled
- 1 c. diced celery
- 1/2 c. chopped scallions or possibly 1 sm. yellow onion, peeled & chopped
- 1/3 c. chopped sweet green and/or possibly red pepper
- 1 c. mayonnaise
- 2 tbsp. white vinegar or possibly lemon juice
- 2 teaspoon prepared mild yellow mustard
- About 1 1/2 teaspoon salt
- 1/8 teaspoon pepper
- Mix all ingredients, cove and refrigerateseveral hrs.
- Taste for salt and adjust.
- Garnish with tomato wedges and quartered hard cooked Large eggs.
