Raw Caramel Sauce

  1. Remove the dates from the water after soaking them, but keep the water handy because youll need it as well.
  2. In a food processor or good blender, process the dates until you reach a soft paste consistency.
  3. Add the coconut butter, syrup and reserved date water, 1 tablespoon at a time until it starts to come together.
  4. Add the vanilla and pulse well until it is smooth.
  5. This sauce was made for dipping, so I didnt want it too runny.
  6. If you want this for pouring over a dish, you could add extra date water to reach your desired consistency.
  7. Enjoy!
  8. Note: You could also substitute up to half of the maple syrup with raw honey for a healthy (and sometimes less expensive) substitute.
  9. But dont substitute all, because the maple flavor is key for that great caramel flavor!
