Shrimp and Creamy Queso Grits

  1. In a medium pot, add heavy cream, water and salt on medium-high heat.
  2. Once the cream mix starts to steam, add in the grits and cook for 3 minutes.
  3. Once the grits start to thicken add in cheese and cook for another 2-3 minutes until cheese has melted and grits are at desired thickness.
  4. Be sure to turn the heat down to medium-low and constantly stir the grits until the cheese has melted completly.
  5. While the grits are cooking, in a seperate pan add butter and melt on medium-low heat.
  6. In a bowl season shrimp with below seasonings.
  7. Once butter has melted add in saffron and stir for 30 seconds before adding in the shrimp.
  8. Cook on medium-high heat for 5 minutes, or until shrimp has cooked through and is pink.
  9. Then toss in green onions, and remove from heat.
  10. Serve grits topped with shrimp and a sprinkle of cayenne pepper!
