Shrimp and Creamy Queso Grits
- 16 shrimps, peeled and devained
- 1 cup water
- 1/2 tsp salt
- 1 cup heavy cream
- 6 tbsp quick grits
- 1/3 cup Quesadilla cheese
- 2 tbsp butter
- 1/4 tsp saffron
- 1 tbsp Adobe Con Sazon
- 1 tbsp Creole sesoning
- 3 tbsp green onions, chopped
- In a medium pot, add heavy cream, water and salt on medium-high heat.
- Once the cream mix starts to steam, add in the grits and cook for 3 minutes.
- Once the grits start to thicken add in cheese and cook for another 2-3 minutes until cheese has melted and grits are at desired thickness.
- Be sure to turn the heat down to medium-low and constantly stir the grits until the cheese has melted completly.
- While the grits are cooking, in a seperate pan add butter and melt on medium-low heat.
- In a bowl season shrimp with below seasonings.
- Once butter has melted add in saffron and stir for 30 seconds before adding in the shrimp.
- Cook on medium-high heat for 5 minutes, or until shrimp has cooked through and is pink.
- Then toss in green onions, and remove from heat.
- Serve grits topped with shrimp and a sprinkle of cayenne pepper!
