Cucumbers with Yogurt
- 3 or 4 small pickling (Kirby) cucumbers or 1 large
- 1/2 cup plain yogurt
- 1/2 teaspoon lemon juice
- 1/4 teaspoon minced chives
- 1/4 teaspoon dry mustard
- 18 teaspoon paprika
- Salt and freshly ground black pepper to taste
- 1 small clove garlic, finely minced
- If cucumber is waxed, peel it.
- Kirby or pickling cucumbers do not require peeling since they are not waxed.
- Slice cucumbers thinly.
- Combine remaining ingredients and mix well.
- Stir in cucumbers and serve.
