Peanut Butter Jumbos
- 1/2 c. butter or margarine, softened
- 1 c. packed brown sugar
- 1 c. granulated sugar
- 1 1/2 c. peanut butter
- 3 eggs
- 2 tsp. baking soda
- 1 tsp. vanilla
- 4 1/2 c. uncooked rolled oats
- 1 c. (6 oz.) semi-sweet chocolate chips
- 1 c. candy coated chocolate pieces
- Preheat oven to 350u0b0.
- Lightly grease cookie sheets or line with parchment paper.
- Cream the butter, sugars, peanut butter and eggs in a large bowl until light.
- Blend in baking soda, vanilla and oats until well mixed.
- Stir in chocolate chips and candy pieces.
- Scoop out about 1/3 cupful of dough for each cookie. Place on prepared cookie sheets, spacing about 4-inches apart. Press each cookie to flatten slightly.
- Bake 15 to 20 minutes or until firm in center.
- Remove to wire racks to cool.
- Makes about 1 1/2 dozen cookies.
