Easy Sweet Potato Bites in the Microwave
- 500 grams peeled Asian sweet potato
- 40 grams Butter
- 60 grams Sugar
- 70 ml Milk
- 2 Egg yolks
- 1 dash Vanilla extract
- 1 Egg yolk (for the glaze)
- 1 Black sesame seeds
- Peel the Asian sweet potatoes thickly.
- Halve vertically, cut into 1 cm slices and soak in water.
- Drain the potatoes and place in a microwave safe plate.
- Cover with plastic wrap and microwave for 7~8 minutes until they are easily pierced with a toothpick.
- Mash the potatoes or blend in a food processor and add to a pot.
- Add the butter, sugar and milk and cook over low heat until thick.
- Remove from the heat and add the egg yolks and vanilla extract.
- Shape into sweet potato shapes and place on a parchment paper lined baking sheet.
- Brush a the beaten egg yolk and sprinkle with the black sesame seeds.
- Bake in an oven preheated to 200C for 15 minutes, and they are done.
