Easy Sweet Potato Bites in the Microwave

  1. Peel the Asian sweet potatoes thickly.
  2. Halve vertically, cut into 1 cm slices and soak in water.
  3. Drain the potatoes and place in a microwave safe plate.
  4. Cover with plastic wrap and microwave for 7~8 minutes until they are easily pierced with a toothpick.
  5. Mash the potatoes or blend in a food processor and add to a pot.
  6. Add the butter, sugar and milk and cook over low heat until thick.
  7. Remove from the heat and add the egg yolks and vanilla extract.
  8. Shape into sweet potato shapes and place on a parchment paper lined baking sheet.
  9. Brush a the beaten egg yolk and sprinkle with the black sesame seeds.
  10. Bake in an oven preheated to 200C for 15 minutes, and they are done.
