Black Bean Chicken Burrito
- 1 Tablespoon Canola Oil
- 1/4 whole Onion, Chopped
- 2 cups Rotisserie Or Other Cooked Chicken, Shredded
- 1/4 teaspoons Chili Powder
- 2 cloves Garlic, Minced
- 18 teaspoons Salt
- 18 teaspoons Pepper
- 15 ounces, weight Canned Black Beans, Rinsed And Drained
- 4 whole (10 Inch) Flour Tortillas
- 4 ounces, weight Monterey Jack Cheese, Shredded
- Cooking Spray
- Heat a large skillet over medium heat.
- Add oil and heat it a bit, then add onions and heat for 2 minutes.
- Add chicken and heat for another minute or two.
- Stir in chili powder and mix until fully combined.
- Add garlic and stir for a minute.
- Remove from heat and add salt and pepper.
- Toss in black beans and mix to combine.
- Lay out your tortillas on a work surface.
- Divide chicken mixture evenly among the tortillas, spooning it down the center of each.
- Top with cheese.
- Roll up each burrito by tucking in the sides and rolling the middle to one side.
- If you have any extra filling place it in a small pan on the stove on med-low heat.
- Coat each burrito with cooking spray.
- Place burritos in a clean skillet pan over medium heat.
- Cook for a couple minutes on each side until browned.
- Top with sour cream or salsa and any remaining filling.
