Black Bean Chicken Burrito

  1. Heat a large skillet over medium heat.
  2. Add oil and heat it a bit, then add onions and heat for 2 minutes.
  3. Add chicken and heat for another minute or two.
  4. Stir in chili powder and mix until fully combined.
  5. Add garlic and stir for a minute.
  6. Remove from heat and add salt and pepper.
  7. Toss in black beans and mix to combine.
  8. Lay out your tortillas on a work surface.
  9. Divide chicken mixture evenly among the tortillas, spooning it down the center of each.
  10. Top with cheese.
  11. Roll up each burrito by tucking in the sides and rolling the middle to one side.
  12. If you have any extra filling place it in a small pan on the stove on med-low heat.
  13. Coat each burrito with cooking spray.
  14. Place burritos in a clean skillet pan over medium heat.
  15. Cook for a couple minutes on each side until browned.
  16. Top with sour cream or salsa and any remaining filling.
