Non-Dairy Turkey Sub
- 2 Whole Wheat Baguettes
- 2 Tablespoons Mayonnaise
- 6 Eggs
- 2 Tablespoons Mustard
- 4 slices Steak Tomato
- 5 ounces, weight Sliced Deli Turkey Pastrami
- 2 Sliced Sour Pickles
- Spread 2 big pieces of foil on your working space.
- Cut the baguettes in half lengthwise and smear mayo on both sides.
- Arrange it cut side up in the toaster oven on toast setting and allow it to to toast for 5 minutes, depending on how crispy you enjoy your sub!
- While bread is toasting fry your eggs in a frying pan over medium heat.
- I stir them around as they cook because I like my egg in little pieces.
- Cook to your liking.
- When toast is done remove it from the toaster oven and lay it out on the pre-cut foil.
- Smear mustard on both cut sides of baguettes.
- Arrange 2 slices of the tomato on each half of bread, add the pastrami, eggs and sour pickles.
- Wrap tightly with the foil and cut in half.
- Now you have your meal on the run!
- Enjoy.
