Frank-Veggie Hot Pot
- 1 lb. hot dogs
- 1 (10 1/2 oz.) can chicken broth plus water to equal 3 c. liquid
- 1 c. elbow macaroni
- 1 tsp. dried basil leaves
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1 (10 oz.) pkg. frozen mixed vegetables
- 1 small onion, diced
- 1/3 c. sour cream
- 1/3 c. mayonnaise (optional)
- 1/3 c. chopped parsley
- 1/3 c. chopped chives or green pepper
- Bring broth and water to boil; add macaroni and spices. Return to boil; cook 5 minutes.
- Stir in hot dogs, vegetables and onion; simmer 5 minutes longer until macaroni is tender, vegetables are cooked and water is almost absorbed.
- Fold in sour cream and mayonnaise if used.
- Garnish with parsley, chives and/or green pepper.
