Brown Sugar & Mocha Open Dorayaki

  1. Place the ingredients in a bowl and mix well with a hand mixer.
  2. Switch to a spatula, add the pancake mix and gently fold it in.
  3. Whip together the ingredients until soft peaks form.
  4. Spoon out the batter from Step 1 onto a heated electric griddle.
  5. Spread it out to about 5 cm in diameter.
  6. When the surface begins to bubble, flip over the pancakes.
  7. Top the pancakes with the whipped cream, followed by the anko.
  8. All done.
