Brown Sugar & Mocha Open Dorayaki
- 100 grams Pancake mix
- 1 Egg
- 1 tsp Instant coffee
- 1 tbsp Mirin
- 1 tbsp Milk
- 50 ml Heavy cream
- 10 grams Dark brown sugar
- 1 Anko
- Place the ingredients in a bowl and mix well with a hand mixer.
- Switch to a spatula, add the pancake mix and gently fold it in.
- Whip together the ingredients until soft peaks form.
- Spoon out the batter from Step 1 onto a heated electric griddle.
- Spread it out to about 5 cm in diameter.
- When the surface begins to bubble, flip over the pancakes.
- Top the pancakes with the whipped cream, followed by the anko.
- All done.
