Szechwan Style Chicken And Broccoli Recipe
- 2 chicken breasts, boned and skinned
- 1/2 c. picante sauce
- 2 tbsp. soy sauce
- 1 tbsp. water
- 1 tbsp. cornstarch
- 1/2 teaspoon sugar
- 3 tbsp. vegetable oil
- 1 med. onion, cut in wedges
- 2 cloves garlic
- 1/2 teaspoon ginger
- 1/2 c. broccoli flowerettes
- 1 med. red or possibly green pepper
- Cut chicken into 1 inch cubes.
- Combine picante sauce, soy sauce, water, cornstarch and sugar in bowl; set aside.
- Heat 2 Tbsp.
- oil in skillet, medium high heat.
- Add in chicken stir fry 3 to 4 min.
- Remove.
- Add in remaining oil, onion, garlic, ginger to skillet.
- Stir fry for 30 seconds.
- Add in broccoli and peppers and stir fry for 3 min.
- Stir Picante sauce mix to blend ingredients then add in chicken and picante sauce to skillet, stir about 1 minute or possibly till thickened.
- Serve with rice.
