Sweet 'n Smoky Baked Beans
- 2 tablespoons olive oil
- 3 garlic cloves, chopped
- 1 medium onion, diced
- 1 medium red bell pepper, diced
- 1 (15 ounce) can pinto beans, drained and rinsed
- 12 lb firm tofu, cubed
- 1 teaspoon liquid smoke
- 1 teaspoon soy sauce
- 13 cup vegan brown sugar
- 1 teaspoon cinnamon
- 1 tablespoon chili powder
- 14 teaspoon fennel seed
- Preheat oven to 400 degrees.
- Prepare an 8x8 baking dish with cooking spray.
- In a saucepan, heat olive oil, then add garlic.
- Cook until slightly browned.
- Add onions and peppers.
- Saute until onions become translucent.
- Add pinto beans, tofu cubes, liquid smoke and soy sauce.
- Mix with onion and peppers.
- Stir in sugar and spices.
- Cover saucepan with lid and simmer for approximately 10 minutes.
- Pour cooked mixture into baking dish.
- Bake in over for 25-30 minutes.
