Penguin Party Cookies

  1. Line baking sheet with waxed paper; set aside.
  2. Combine all frosting ingredients in bowl.
  3. Beat at medium speed until smooth and creamy.
  4. Spoon frosting into large resealable plastic food bag.
  5. Cut off very small tip from 1 corner of bag.
  6. Slice off 1/4 of each cookie, using large serrated knife and a gentle sawing motion to create a straight edge.
  7. Pipe generous amount of frosting onto straight edge of 1 cookie.
  8. Press straight edge of another cookie into frosting to create penguin body.
  9. Repeat with remaining cookies.
  10. Decorate penguins by piping frosting into heart-shape to create penguin head on top cookie.
  11. Pipe round body on bottom cookie, leaving small amount of cookie showing around edge.
  12. Smooth out frosting with tableware knife.
  13. Attach candy eyes to penguin head.
  14. Cut small wedges of gum drops for beak; attach to penguin head.
  15. Cut fruit leather into strips for scarves; attach to front of cookie only.
