Duck With Orange Gravy Recipe

  1. Combine juice and jelly in a small saucepan; cook over medium heat, stirring often, till jelly melts.
  2. Remove from heat, and set aside.
  3. Rub cavity of duck with salt; stuff with celery and onion.
  4. Clove cavity of duck with skewers.
  5. Place duck, breast side up, on rack in a shallow roasting pan; dot with butter.
  6. Bake, uncovered at 375 degrees for 1 hour, basting often with jelly mix.
  7. Cover duck loosely with aluminum foil; bake 1 to 1 1/2 hrs, basting often.
  8. Prepare regular and wild rice according to package directions; stir together, and spoon onto serving platter.
  9. Sprinkle with minced parsley.
  10. Place duck on top of rice; garnish with orange twists and parsley sprigs.
  11. Serve with orange gravy.
  12. Yield: 4 servings.
