Penne With Tuna And Tomato Sauce Recipe
- 1 (28 ounce.) can whole tomatoes, blended
- 2 ounce. extra virgin olive oil
- 2 flat fillets anchovies
- 1 med. onion, minced
- 1 clove garlic, sliced very thin
- 2 1/2 ounce. oil-packed tuna, minced
- Healthy pinch of black pepper
- 1 pound penne
- Heat oil in skillet with anchovies, onion and garlic over low flame.
- Cook till anchovies are dissolved.
- Saute/fry for 5 min, then add in tomatoes.
- Cover and cook for 20 additional min.
- In the meantime, cook penne in lightly salted boiling water till al dente.
- Add in tuna and a healthy pinch of black pepper to sauce.
- Mix with penne and serve.
