Lemon, Raspberry and Pear Mini Parfaits
- 2 cups JELL-O Lemon Instant Pudding
- 2 qt. cold milk
- 1 qt. canned sliced pears, drained, chopped Safeway 1 lb For $1.88 thru 02/09
- 1/2 cup raspberry dessert sauce
- 2 cups vanilla wafers, chopped
- 2 cups prepared whipped topping
- Prepare pudding with milk as directed on package.
- Refrigerate 2 hours or until thickened.
- Meanwhile, toss pears with raspberry sauce.
- Refrigerate until ready to use.
- Spoon 1/4 cup (2 oz.)
- of the pudding into each of 32 (4-oz.)
- clear plastic cups (or into each of 8 plastic cups for trial recipe).
- Top each with layers of 2 Tbsp.
- (1-1/4 oz.)
- pear mixture, 1 Tbsp.
- chopped wafers and 1 Tbsp.
- whipped topping.
- Refrigerate several hours or until chilled.
