Summer Vegetable Casserole

  1. Slice all veggies into round slices.
  2. Lightly grease the bottom of a casserole dish.
  3. (The size of your dish here depends on the quantity that you want to make.
  4. If you want to make a lot more, use a bigger dish.
  5. I generally use an 8x8 dish but use what suits you!
  6. Same thing goes with the quantity of vegetables that you use.
  7. If you want to make more, use more veggies.)
  8. Start layering your veggies into the dish: start with a layer of zucchini, then a layer of onion, a layer of squash, a layer of tomato, etc.
  9. Feel free to throw in a layer of cheese wherever you see fit to add cheese.
  10. Salt and pepper as you go, if so desired.
  11. Stack as many layers as youd like.
  12. Your final layer should be cheese, and on top of the cheese, lay down the strips of uncooked bacon.
  13. Bake at 400 degrees for about 30 minutes or until veggies are fork-tender.
