Anna's Easy Artichoke Pasta
- 1 sm. onion
- 2 tbsp. olive oil
- 9 oz. artichoke hearts *
- 4 oz. ricotta cheese
- 1 lb. penne
- salt, pepper
- Heat olive oil in a medium sauce pan.
- Add onion and cook until translucent.
- Next add artichoke hearts, salt and pepper to taste, cook over medium heat for about 15 minutes.
- Meanwhile, cook pasta al dente, then add to artichokes pan.
- Coat pasta with ricotta and serve.
