Breakfast Frittata

  1. Heat oil in a large skillet with an oven safe handle.
  2. Add potatoes and cook per package.
  3. Beat together eggs, milk, salt , and pepper and pour over potatoes.
  4. Sprinkle with tomatoes and onions.
  5. (I usually like to add a few more tomatoes.
  6. ).
  7. Cover and cook over low heat for 5 to 7 minutes.
  8. Sprinkle with the cheeses and continue to cook until the center is set.
  9. Heat the broiler and broil the frittata 6 inches from the heat until lightly browned.
  10. Let stand on a wire rack for 5 to 10 minutes before serving.
