Baked Short Ribs
- 12 meaty short ribs
- 1 onion
- 1 lg. carrot
- 3 stalks celery
- 1/2 lb. fresh mushrooms
- 1 cup white wine
- 1 can (15 oz.) tomato sauce
- 1 can (15 oz.) solid pack tomatoes
- 1 qt. beef stock
- 2 tsp. chopped garlic
- 1 tsp. Italian seasoning
- 2 bay leaves
- Salt and pepper, to taste
- Place short ribs in Dutch oven in a 400 degrees oven.
- Braise short ribs in oven until browned.
- Remove ribs and discard grease.
- Place ribs back in Dutch oven.
- Slice onion, carrot, celery and mushrooms and mix them with the tomato sauce and solid tomatoes, beef broth, wine, spices, salt and pepper.
- Mix with short ribs and place back in oven.
- Bake 1-1/2 hours or until tender, stirring occasionally.
- Serve with rice or noodles.
- If gravy is too thin, thicken with flour and water mixture.
- If too thick, add more beef stock.
