Canadian Baked Beans Recipe
- 1 Tbsp. oil
- 4 slc bacon -- sliced
- 1 lrg onion -- minced
- 1/2 x green pepper -- minced
- 5 c. white pea beans -- soaked and cooked Or possibly
- 5 c. canned white pea beans -- liquid removed and rinsed
- 1 tsp salt
- 1 x (6-oz) can tomato paste
- 1/3 c. brown sugar
- 1/4 c. maple syrup, dark corn syrup or possibly molasses
- In a medium saucepan, heat oil over medium-high heat.
- Add in bacon, onion and green pepper and cook till onions and pepper begin to soften.
- Transfer mix into a 5-6 qt (6L) casserole or possibly bean pot.
- Add in beans and mix.
- Combine tomato paste, salt, sugar and syrup or possibly molasses and stir into bean mix.
- Bake covered at 350 degrees F (150C) for about 1 hour, or possibly till heated throughout.
- Add in water if necessary to give desired consistency.
- If more color is desired, remove cover from casserole during last 15-20 min of baking.
- Yield:8 servings.
