Razor Clams with Fermented Black Beans and Holy Basil Paste

  1. Sweat ginger and garlic in oil, do not brown.
  2. Add the clams, cilantro, scallions, lime leaves, basil leaves, and black beans.
  3. Deglaze with the sherry and chicken stock.
  4. Cover and steam.
  5. Add holy basil paste, tomato concasse, lemon and butter.
  6. Adjust seasoning.
  7. Garnish with lemon wedges.
  8. Combine ingredients in a blender and puree.
