Watermelon Granita

  1. In food processor
  2. fitted
  3. with the steel blade or in a blender, in batches,
  4. puree
  5. the
  6. watermelon and transfer to a bowl.
  7. In a
  8. stainless steel or enameled saucepan, combine the sugar, lime juice, lime
  9. rind and water; bring the liquid to a boil, stirring to
  10. dissolve sugar.
  11. Simmer syrup for 5 minutes and let cool.
  12. Stir the syrup into the puree; pour the mixture into an 8-inch
  13. square
  14. baking dish and freeze until firm, but not frozen. In a chilled bowl, beat the mixture until smooth. Return mixture to pan
  15. and
  16. freeze
  17. for 3 hours.
  18. Let stand at room temperature until soft enough to scoop.
