Latkes for Kids

  1. Child: Peel the potatoes and carrots.
  2. Put the potatoes in a bowl of cold water.
  3. Adult with child: Use a food processor to carefully grate the zucchini, potatoes, carrots and onion.
  4. Child: Combine the vegetables, eggs, salt and pepper.
  5. Add the matzo meal.
  6. Shape the mixture into flat pancakes using 1 to 2 tablespoons of batter for each.
  7. Adult with child: Fry the latkes in about 2 tablespoons of hot oil for 1 1/2 to 2 minutes per side; add oil as needed.
  8. Drain on paper towels.
  9. Serve hot with applesauce.
