Coconut and Vegetable Soba Noodle Salad
- Dressing
- 2 cups KRAFT Oriental Sesame Dressing
- 1 cup canned unsweetened coconut milk
- 1/4 cup lime zest
- 2/3 cup fresh lime juice Safeway 3 ct For $1.00 thru 02/09
- 1/4 cup yellow curry paste
- 1/2 tsp. salt
- Soba Noodle Salad
- 1 gal. cooked soba noodles
- 1 gal. napa cabbage, chiffonade
- 2 cups shiitake mushrooms, sliced, sauted
- 1 qt. daikon radishes, shoestring cut
- 1 qt. seedless cucumbers, peeled, shoestring cut
- 1 qt. BAKER'S ANGEL FLAKE Coconut, toasted
- 1 qt. snow peas, julienne cut
- 2 cups canned sliced water chestnuts, drained
- 2 cups red peppers, julienne cut
- 2 cups yellow peppers, julienne cut
- 2 cups fresh cilantro, chopped
- For Dressing: Combine all ingredients.
- Refrigerate until ready to use.
- For Soba Noodle Salad: Combine all ingredients.
- Add Dressing; mix lightly.
