Penuche Coconut Bars
- 1/2 c. shortening
- 1/2 c. brown sugar
- 1 c. plain flour
- 1/2 tsp. salt
- 2 Tbsp. milk
- 2 eggs
- 1 c. brown sugar
- 1 tsp. vanilla
- 2 Tbsp. plain flour
- 1/2 tsp. baking powder
- 1 1/3 c. flaked coconut
- 1 c. chopped pecans
- Blend shortening and 1/2 cup brown sugar.
- Add 1 cup flour and the salt.
- Stir in milk.
- Pat evenly in lightly greased 9 x 9 x 2-inch pan.
- Bake at 325u0b0 for about 20 minutes or until light brown.
- Beat eggs; add 1 cup brown sugar and vanilla and beat until thick and lemon colored.
- Add remaining ingredients and mix well.
- Spread over baked crust.
- Bake at 325u0b0 for 20 minutes until golden brown.
- Cool and cut into 36 squares.
