Banana Waffles

  1. Preheat waffle iron.
  2. In a medium bowl, combine flour, baking powder, cinnamon, ginger, and salt.
  3. In another bowl, beat eggs with brown sugar until light and fluffy.
  4. Puree extra-ripe banana in food processor.
  5. Beat pureed banana, milk, molasses, and melted margarine into egg mixture; add to dry ingredients.
  6. Stir until just moistened.
  7. To make each waffle, bake 3/4 batter in waffle iron until golden brown.
