Tex-Mex Chicken Breasts
- 4 boneless skinless chicken breasts
- 1 tablespoon taco seasoning
- 12 teaspoon garlic powder
- 14 teaspoon salt
- 18 teaspoon ground pepper
- 12 cup taco sauce or 12 cup red enchilada sauce
- 4 tablespoons butter, room temperature
- 12 cup mayonnaise
- 12 cup shredded cheese (I use sharp ceddar or pepper jack)
- 12 teaspoon Tabasco sauce
- paprika
- Pre-heat oven to 350 degrees.
- Mix garlic powder, salt, and pepper with taco seasoning and sprinkle over both sides of chicken pieces.
- Pour taco or enchilada sauce on top of each piece.
- Mix butter, mayo and cheese together.
- Spread 1/4 mix on each breast, gently spreading almost to the edges.
- Sprinkle on paprika.
- Bake for 20-30 minutes, uncovered, or until juices run clear.
