Corn Cakes

  1. Preheat griddle to 350
  2. In a medium mixing bowl, combine corn meal and sugar.
  3. Blend remaining 5 ingredients until chunky.
  4. Add blended ingredients to mixing bowl.
  5. Stir to combine.
  6. Scoop 1/4 cup of batter onto griddle.
  7. Cook 2-3 minutes per side, flipping once.
  8. Makes 6-8
