Pumpkin And Bean Frittata With Salsa

  1. Spray a fry pan with cooking spray and saute the onion for 2-3 minutes until tender.
  2. Add the pumpkin, red pepper and beans and distribute evenly over the pan.
  3. Whisk together the eggs, milk and flour, and pour over the vegetables.
  4. Cook over a medium heat until the frittata is almost set, then place under a hot grill to cook and brown the top until golden.
  5. Cut the frittata into wedges and serve onto plates with a dollop of Philly* and salsa.
  6. Garnish with fresh herbs and serve.
