Pumpkin And Bean Frittata With Salsa
- Canola cooking spray
- 1 onion, sliced King Sooper's 1 lb For $0.99 thru 02/09
- 500g pumpkin, cut into cubes and steamed or dry baked until tender
- 1 red pepper, roasted and sliced
- 240g can red kidney beans, rinsed and drained
- 2 eggs, lightly beaten, combined with
- 2 egg whites
- 1/2 cup reduced fat milk
- 2 tablespoons SR flour
- 1 cup salsa
- 125g tub PHILADELPHIA Light Spreadable Cream Cheese
- Spray a fry pan with cooking spray and saute the onion for 2-3 minutes until tender.
- Add the pumpkin, red pepper and beans and distribute evenly over the pan.
- Whisk together the eggs, milk and flour, and pour over the vegetables.
- Cook over a medium heat until the frittata is almost set, then place under a hot grill to cook and brown the top until golden.
- Cut the frittata into wedges and serve onto plates with a dollop of Philly* and salsa.
- Garnish with fresh herbs and serve.
