Coconut Creamed Corn
- 1 packages frozen super sweet corn
- 1 can coconut milk
- 3/4 stick butter
- 1 large pinch sugar
- 1 pinch salt
- Melt butter slowly in a large saute pan.
- Add corn when butter begins to brown.
- Toss.
- Add salt and sugar.
- Toss.
- Add coconut milk.
- Reduce on medium-low heat until liquid is nearly evaporated.
- Variations; Coconut extract, shredded coconut, basil, cilantro, ginger, lime, pineapple preserves, crushed pineapple, vanilla, sage, parsely, onions, shallots, white vinegar, rice vinegar, ground white pepper, bell peppers, hot peppers, celery,
