Pumpkin Spice Dutch Babies
- 4 eggs
- 34 cup skim milk
- 34 cup whole wheat flour
- 2 teaspoons maple syrup
- 1 teaspoon pure vanilla extract
- 1 12 teaspoons pumpkin pie spice
- 2 tablespoons butter
- 1 tablespoon pumpkin puree
- Preheat oven to 425.
- Place all ingredients except butter in a blender and blend until smooth and completely combined, no lumps.
- Place the butter into a cast iron pan or into separate ramekins and place in oven for 2-3 minutes until butter is completely melted.
- Remove pan from oven and pour batter into it.
- Quickly return it to the oven and bake for 20-25 minutes or until the little guy is all puffy and brown around the edges.
- Serve with butter and syrup or jam.
- Serves 4 or hide in a closet and eat it by yourself.
