Jerky
- 2 pounds Elk, Lean Cuts Are Ideal
- 2 Tablespoons Worcestershire Sauce
- 2 Tablespoons Red Wine Vinegar
- 1 Tablespoon Salt
- 1 teaspoon Brown Sugar
- 1 teaspoon Red Pepper Flakes
- 2 cloves Garlic, Sliced
- 2 teaspoons Cayenne Pepper
- 1 cup Water
- Put the meat in the freezer for about 30 minutes, just until firm.
- Slice it into strips about 1/4 inch thick across the grain.
- Mix the other ingredients together in a bowl and mix well.
- Let sit for 10 minutes.
- Add the strips and marinade and store covered in the refrigerator overnight.
- Preheat the oven to 200 degrees F. Place the strips on foil with the door propped open and dry the strips until they are pliable, 5-7 hours.
- Store in a plastic container for up to 2 weeks.
- Makes about 20-25 strips.
