Mad Dog’S Serious Kick-Ass Barbecue Sauce
- 1 large vidalia onion, chopped
- 2 tablespoons butter
- 1 cup ketchup (I use Heinz 57)
- 1/2 cup beef stock
- 1/4 cup jim beam Bourbon
- 1/4 cup blackstrap molasses
- 1 chipotle chile in adobo (two if you want a real kick)
- 3 tablespoons Worcestershire sauce
- 1 teaspoon liquid smoke
- 2 tablespoons red wine vinegar
- 1/3 cup light brown sugar
- 2 teaspoons mustard powder
- 2 teaspoons fresh ground black pepper
- Melt butter in frying pan and cook onions until soft and translucent.
- In a saucepan combine all ingredients, bring to a boil, reduce temperature and simmer for 30-45 minutes.
- Remove from heat and let cool to room temperature before using.
