Fresh Apple Gingerbread
- 12 cup butter or 12 cup margarine
- 12 cup sugar
- 2 eggs
- 13 cup molasses
- 2 cups flour
- 12 teaspoon baking soda
- 34 teaspoon salt
- 1 teaspoon ground ginger
- 12 teaspoon cinnamon
- 12 teaspoon nutmeg
- 14 teaspoon clove
- 1 14 cups apples, peeled and grated
- 13 cup milk
- whipping cream (optional)
- Cream together butter and sugar.
- Beat in eggs one at a time.
- Blend in molasses.
- Mix flour, baking soda, salt and spices; add to creamed mixture alternately with the milk, beginning and ending with four mixture.
- Stir in apple.
- Pour into greased and floured 9x9 inch baking pan.
- Bake in preheated 350 F oven for 45 to 50 minutes, until cake tester inserted in center comes out clean.
- Cool in pan for 10 minutes and turn out onto rack.
- Serve warm with cream if desired.
