TX's Style ~ UnStuffed Bell Pepper Casserole
- 1 tbsp Olive oil
- 1 Onion, chopped
- 2 Bell Peppers, chopped
- 1/2 Poblamo pepper, chopped
- 1 lb Ground Round
- 1 tbsp Beef boullion
- 1/2 cup Hot water
- 3 cup Cooked rice
- 1 Monterey Jack Cheese, shredded
- Heat oven 350
- Saute onion and peppers in oil
- Add ground round and brown
- In a sauce pan heat and desolive boullion and water
- Mix boullion, rice and beef mixture, scoop into a casserole dish, cover and bake for 50 min
- Add cheese, bake uncovered for 7 min
