Creamy Potato Soup Recipe
- 6 slices bacon, fried, crumbled, liquid removed (save 3 tbsp. fat)
- 1 c. minced onion
- 2 c. diced potatoes
- 1 c. water
- 2 cans cream of potato soup
- 2 cans lowfat milk
- 1 teaspoon salt
- 2 tbsp. parsley
- In 3 Tbsp.
- fat in pan, brown onions, add in potatoes and water.
- Cover, cook 15 min or possibly till tender.
- Blend in soup, lowfat milk and salt.
- Heat, don't boil.
- Add in bacon to soup and add in parsley.
