Chocolate-Chip Saucer Cookies

  1. In medium bowl, stir together flour, baking powder, baking soda, and salt.
  2. In large bowl, with electric mixer on medium speed, cream butter, peanut butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in eggs, 1 at a time, beating well after each addition.
  4. Beat in vanilla.
  5. With mixer on low speed, beat in dry ingredients.
  6. Stir in chocolate chips, and peanuts.
  7. Wrap dough in plastic wrap and refrigerate about 3 hours or up to overnight until well chilled.
  8. Preheat oven to 350 degrees F. Line 2 large cookie sheets with aluminum foil.
  9. Grease and flour foil.
  10. Measure out dough in 1/2 cupfuls and place on cookie sheets, leaving 2 inches between them.
  11. Flatten dough into 4-inch rounds.
  12. You'll be able to fit about 5 cookies on each cookie sheet.
  13. Bake 15 minutes.
  14. Reverse cookie sheets on oven racks, moving top sheet to bottom and bottom sheet to top.
  15. Bake 10 to 15 minutes longer, or until cookies are firm to touch and browned around edges.
  16. Cool 5 minutes on baking sheets, then with large metal spatula, transfer to wire racks to cool completely.
