cheater's chicken enchiladas
- 1 lb boneless chicken breast
- 1 can enchilala sauce
- 1 packages taco bell or other taco mix
- 1 packages shredded mexican cheese blend
- 6 soft tortilla shells
- preheat oven to 350
- cube chicken and sautee in olive oil until lightly cooked, about 3 minutes
- add taco mix and water as per directions, cover and simmer for 5 minutes
- fork out chicken peices and cut into small peices on cutting board
- place chicken into shells with sprinkle of cheese, place into corning ware
- once done with all shells, cover with enchilada sauce and remainder or cheese
- cook covered for 30 minutes
