Spinach Apple Salad
- 2 tablespoons water
- 1 12 tablespoons red wine vinegar
- 1 tablespoon olive oil
- 1 tablespoon honey
- 2 teaspoons Dijon mustard
- 14 teaspoon fresh ground black pepper
- 1 apple, thinly sliced lengthwise (Gala or Granny Smith)
- 1 (10 ounce) bag Baby Spinach
- 1 red onion, thinly sliced
- 14 lb button mushroom, sliced
- 2 slices bacon, cooked and crumbled (optional)
- Combine first 6 ingredients (water through pepper) in a small bowl; whisk together.
- Place the apple slices in a large bowl.
- Spoon 1 tbsp dressing over apples, toss to coat.
- Add spinach, onions, mushrooms, and remaining dressing; toss to coat.
- Sprinkle the bacon over the top of salad.
