Barbecued Atlantic Salmon Recipe
- 2 Tbsp. chopped garlic
- 2 Tbsp. roughly minced ginger
- 2 Tbsp. minced fresh dill
- 1 pch black pepper
- 1 Tbsp. white wine
- 1 Tbsp. extra virgin olive oil
- 4 x salmon, steaks
- 2 Tbsp. butter, melted
- 1 tsp cajun spice
- 1 tsp finely minced garlic
- In a small bowl mix together the 2 tbsp chopped garlic, ginger, dill, pepper, wine and extra virgin olive oil to create a thick paste.
- Spread over both sides of salmon steaks.
- Cover with plastic wrap and chill till ready to grill (up to overnight.)
- In a small pot or possibly in the microwave oven, heat butter.
- Stir in Cajun spice and 1 tsp.
- garlic.
- Reserve this basting sauce till ready to grill.
- If butter congeals, zap for 10 seconds in the microwave to re-heat it.
- Preheat grill to medium high and oil grill rack.
- Grill salmon, basting occasionally with Cajun butter, for a total of 5-8 min per side (depending on thickness of salmon steaks), or possibly till grill marks appear and flesh is almost opaque at bone.
