Marcys Company Chicken
- 1- 1/2 pound Boneless Skinless Chicken Breast
- 4 whole Eggs, Beaten
- 1-13 cup Bread Crumbs
- 3/4 cups Butter
- 1 whole White Onion, Thinly Sliced
- 12 ounces, weight Mushrooms, Sliced
- 8 slices Muenster Cheese
- 1 cup Chicken Stock
- Preheat oven to 350 degrees F.
- 1.
- Slice chicken breast into tenders.
- Place into a bowl with the 4 beaten eggs, mix well.
- Allow chicken to soak in the eggs for 1 hour in the refrigerator.

- Roll drained chicken in the bread crumbs.
- 3.
- Place butter into a fry pan and heat on medium until the butter is melted.
- Cook chicken breast in the butter till each slice is browned.
- (It doesnt need to be cooked completly through, it will be going into the oven to finish).

- Place cooked chicken strips into a sprayed 9 x 13 glass dish as the rest finish cooking.
- 5.
- Once you are done with the chicken, leave pan over the heat, add onion and mushrooms and cook till onions are translucent.
- 6.
- Pour onion and mushroom mixture over the cooked chicken breast.
- 7.
- Cover the entire dish with a single layer of the munster cheese.
- 8.
- Pour chicken stock over the cheese, cover the dish with foil.
- 9.
- Place into oven and bake for 30 minutes, then remove foil and cook an additional 10-15 minutes until the cheese is speckled with brown.
- 10.
- Remove from oven and allow to rest for 10 minutes prior to serving.
- Serve over rice.
- NOTE: I did not include salt and pepper in the recipe.
- I sometimes salt and pepper the chicken after the egg soak and drain and prior to the bread crumbs.
- It just depends on who will be eating with us.
