Turtles Cheesecake
- 1-1/2 cup pecans, chopped
- 2 tbsp. sugar
- 2 tbsp. unsalted butter, melted
- 3 cups cream cheese, softened
- 3/4 cup brown sugar, packed
- 1 tbsp. all-purpose flour
- 2 tsp. vanilla
- 3 eggs
- 14 turtles candies, chopped
- Whole turtles for garnish
- Combine pecans, sugar and butter; mix well.
- Press on to the bottom of a 9-inch (23 cm.)
- springform pan.
- Bake in 325F.
- oven for 12 minutes; set aside.
- Beat cream cheese until smooth.
- Beat in brown sugar, flour and vanilla until well blended.
- Add eggs one at a time, mixing well after each addition.
- Stir in chopped turtles.
- Pour onto pecan crust.
- Bake in 325F.
- oven for 50 to 60 minutes, or until center of cake is just set.
- Turn off oven and let cake stand in oven 30 minutes.
- Remove to a wire rack, cool to room temperature.
- Chill for at least 4 hours before service.
- Garnish with whole turtles.
