New York Cheddar Cheese Soup

  1. In a large saucepan cook onion and celery in butter for approximately five minutes.
  2. Blend in next five ingredients.
  3. Then add bouillon cubes, water and carrot.
  4. Bring to a boil and simmer, covered, for 15 minutes.
  5. Add milk and heat almost to boiling.
  6. Watch carefully.
  7. Add cheese and stir until cheese is melted.
  8. Season to taste.
